Since 2000, Seito Sushi has offered its stylish menu to Orlando, pushing culinary boundaries with a continually evolving menu ranging from fresh sushi, contemporary Asian menu, and Omakase selections.
Steve dived into the hospitality industry during his time as a student at UCF, working in a variety of front-of-house positions once he recognized his passion for the culinary arts. In 2009, Steve began his tenure at Seito Sushi & New Japanese as a server and bartender. The following year, Steve was promoted to a management position at Seito Baldwin Park. Immediately compelled by the close knit relationships among the restaurant’s owners and staff, Steve has grown and inspired the Seito Baldwin Park team for over 10 years. He is married to Good Salt's HR Director, Meghan Conkel and lives in Baldwin Park with their dog Maddox.
Born and raised in Orlando, Chef Huy's culinary influence stems from his father (also a chef) who lead multiple kitchens including the central kitchen of Orlando’s late theme park “Splendid China.” Chef Huy spent many summers there as a kid: “I didn’t know it then but I was learning the importance of operations.” His first job at an Asian market really sparked his culinary interest, where one of his daily responsibilities was to cook family meal.“I had the whole store as my pantry, I was a kid in a candy store, literally.” Since then, he has worked at many local establishments around Orlando before coming to Seito Baldwin Park in 2012 as a sushi chef, working his way to Executive Chef of the Baldwin Park team.
Born and raised in Sarasota, Dan Chau “DC” moved to Orlando for college where he studied Biology and Finance, while also working as a kitchen and sushi chef. He later worked at Emeril’s Orlando in 2008 before transitioning to Seito Baldwin Park in 2010 as part of the bar team. Here he was able to quickly dive into his true passion: connecting guests with the perfect cocktail. As Beverage Director, he brings his extensive travel experience and spirit knowledge to craft the beverage menu at Seito Baldwin Park. His favorite cocktail is the Old Fashioned, but he'd never turn down sipping on Suntory Yamazaki 12 Year.
Anthony Chow has been in the culinary industry for over twenty years, working in many noteworthy Orlando restaurants as he honed is craft under brilliant chefs and mentors. His infectious passion and creativity have fueled him in many roles, from opening new restaurants such as Deep Blu Seafood Grill and SushiPop, to becoming the Sous Chef at Seito Baldwin Park. “I have immersed myself in diverse hospitality industry roles with persistent ambition and dedication to the culinary arts. I relish every opportunity to work, brainstorm, and collaborate with other great talents, as well as delving into coaching and training with the team. My mantra is to always stay relevant and ravenous.” Sous Chef Chow joined the Seito Baldwin Park in September of 2020.

Originally from Fort Lauderdale, Dainty initially discovered her passion for guest services while working at her family’s business, which later on influenced her to pursue a Bachelor’s degree in Hospitality Management at UCF’s Rosen College of Hospitality. She joined Good Salt in 2017 while working at The Osprey Tavern. After three years with The Osprey, Dainty was presented with the opportunity to utilize her degree as well as her passion for guest services by joining the Seito Sushi Baldwin Park team as Assistant General Manager. Dainty is excited to learn and further her hospitality career at Seito.
