Dan Chau
General Manager
Born and raised in Sarasota, Dan Chau “DC” moved to Orlando for college, studying Biology and Finance while working in both the kitchen and sushi bar. In 2008 he joined Emeril’s Orlando, then transitioned to Seito Baldwin Park in 2010 as part of the bar team, where he quickly discovered his true passion: crafting memorable guest experiences through cocktails. As Beverage Director, he drew on his extensive travel and spirit knowledge to shape Seito’s beverage program. In 2022 he stepped into the role of General Manager, overseeing daily operations and service. When he’s off the clock, you’ll likely find him enjoying an Old Fashioned—or a pour of Suntory Yamazaki 12 Year.

Huy Tin
Chef Partner
Born and raised in Orlando, Chef Huy draws early inspiration from his father, a longtime chef who led several kitchens, including the central kitchen of the former theme park Splendid China. Beginning his restaurant career in 2004, he gained experience across Japanese, Chinese, American, Thai, and Brazilian cuisines. In 2012 he joined the team at Seito Baldwin Park, eventually becoming Executive Chef Partner. His playful yet refined menu reflects his diverse culinary background and contemporary Japanese influences, earning citywide acclaim, including Best Japanese (2020), Best Sushi (2020), and a top-three Best Chef (2020) placement in Orlando Magazine.
