Born and raised in Orlando, Chef Huy's culinary influence stems from his father (also a chef) who led multiple kitchens including the central kitchen of Orlando’s late theme park “Splendid China.” Starting in 2004 he began working in restaurants, exposing himself to a variety of cuisines including Japanese, Chinese, American, Thai and Brazilian. In 2012 he joined the team at Seito Baldwin Park on the sushi bar under Sushi Chef Stanley Yun, eventually earning the title of Executive Chef Partner of the Baldwin Park team. Chef Huy’s playful yet refined menu at Seito showcases his extensive culinary background, drawing flavors from many of the cuisines he learned from. The bold flavors matched with contemporary Japanese dishes have earned him citywide acclaim in Orlando, including recognition as Best Japanese (2020), Best Sushi (2020), and was named in the top three of the Best Chef (2020) Reader’s Choice awards of Orlando Magazine and Best Sushi (2020) of Orlando Weekly’s Best of Orlando awards.

Dan Chau
General Manager
Born and raised in Sarasota, Dan Chau “DC” moved to Orlando for college where he studied Biology and Finance, while also working as a kitchen and sushi chef. He later worked at Emeril’s Orlando in 2008 before transitioning to Seito Baldwin Park in 2010 as part of the bar team. Here he was able to quickly dive into his true passion: connecting guests with the perfect cocktail. As Beverage Director, he brought his extensive travel experience and spirit knowledge to craft the beverage menu at Seito Baldwin Park. In 2022 he accepted the position of General Manager, now overseeing daily operations and service. When not at work, you can find him sipping his favorite cocktail, the Old Fashioned, but he'd never turn down sipping on Suntory Yamazaki 12 Year.

Dainty Nguyen
Assistant General Manager
Originally from Fort Lauderdale, Dainty initially discovered her passion for guest services while working at her family’s business, which later on influenced her to pursue a Bachelor’s degree in Hospitality Management at UCF’s Rosen College of Hospitality. She joined Good Salt in 2017 while working at The Osprey. After three years with The Osprey, Dainty was presented with the opportunity to utilize her degree as well as her passion for guest services by joining the Seito Sushi Baldwin Park team as Assistant General Manager. Dainty is excited to learn and further her hospitality career at Seito.
